Green Globe Artichoke (Cynara scolymus) is the classic heirloom prized for its generous, tightly layered buds with meaty hearts and rich, buttery flavor. Start seeds indoors 8–12 weeks before the last frost. For earlier bud set, provide a brief vernalization: grow seedlings cool (45–50°F) for 1–2 weeks after they reach 4–6 true leaves. Transplant to a sunny site with deeply loosened, fertile, well-draining soil.

Space plants 36–48 inches apart; mix in compost and mulch well to conserve moisture. Keep evenly moist during establishment and bud formation—drought stress can reduce bud size and tenderness. Side-dress with a balanced fertilizer midseason to support vigorous growth.
