Beets are a cool-season crop that can live through frosts and freezing temperatures. Plant them anytime after the last frost and when the soil temperature is above 50F.
It is best to plant beets directly in the garden so their roots don't get disturbed. They can be started indoors and then transplanted to the garden when they are 2" tall but direct-seeding is the preferred method.
Sow beet seeds 1/2" deep and 1-2" apart. Space rows 1' apart. When the seedlings reach 2", thin them to 3-4". Do not yank out the seedlings as that may disturb the roots of the ones you are keeping. Instead, pinch or snip them off at the base. Water consistently and regularly.
