If you cut into a cucumber that looks perfect and it tastes awful, the plant is stressed. Most modern cucumbers are bred to be mild, but every plant still has bitter compounds called cucurbitacins in its leaves and stems. Cucurbitacins are a natural defense the cucumbers use to keep pests from eating them. When a plant experiences extreme heat or a long drought, those bitter compounds will leak out of the leaves and into the fruit.
The bitterness usually starts at the stem end and is most noticeable just under the skin. If the stress is mild, you can often just peel the cucumber or cut off the first inch of the stem end, and the cucumber is fine. If the whole thing is mouth-puckeringly bitter, throw it away. High levels of these compounds can upset your stomach, and no amount of pickling or soaking will fix it.
Bitter Cucumber Remedies
Water deeply and wait
The biggest trigger for bitterness is soil that fluctuates between bone-dry and soaking wet. To prevent this from happening, water deeply when the top inch of soil feels dry, then leave it alone. If you water a little bit every day, the roots will form near the surface where the soil is hottest. There, they are more susceptible to temperature and moisture swings. Deep watering encourages roots to grow down where the temperature and moisture levels are more stable.
Mulch the soil
Spread two inches of straw or shredded leaves around the base of the plants. Mulch keeps the ground cool and prevents moisture from evaporating too fast. When the soil is bare, it cooks in the afternoon sun, which stresses the cucumber's roots and turns the fruit bitter.
Watch the weather
If several plants turn bitter during a heatwave, they are just reacting to the weather. You don't need to pull the plants. Once the heat breaks and you get back to a steady watering routine, the new fruit that grows will usually taste fine again.
Check for genetic duds
If one plant stays bitter while the others next to it taste great, the problem is in the seed. It is rare, but some plants are born with a higher chemical defense. Pull that plant and don't save any seeds from it, because the bitterness will show up in the next generation too.
