Tender white flesh with a mild, sweet flavor, these parsnips are sure to wow even the most ardent parsnip cynic. These can be dug in the Fall or left in the ground for a Spring harvest. Uniform wedge-shaped roots are 3-inches across and 10-12 inches long. High-yielding, wait to harvest until after the first frost.

Plant parsnips and turnips as soon as the soil is workable. They need a long growing season. Plant seeds 1/2" deep at 1" intervals in rows 2 feet apart. Be patient: they take 2-3 weeks to germinate.
When the seedlings reach 2-3" tall, thin them to 6" apart. They don't need a ton of water but should get at least 1" of water per week. Remove any weeds before they get too big. The weed roots will inhibit the growth of the these root vegetables and may prevent them from growing altogether. Weed management is extremely important.
The roots will be ready for harvest after 16 weeks. It is best to let them stay in the ground for the first few frosts since this improves their sweetness and flavor. Harvest them before the ground freezes completely.
